This was one of the most requested recipes after I had posted this picture on facebook. So here it is folks! This is perfect as an appetizer, a side dish for dinner, or even just a light afternoon snack. I’m warning you though…be careful..they are slightly addicting.
VEGAN – GLUTEN FREE – SUGAR FREE
VEGAN KALE & POTATO BITES
-5 cups fingerling potatoes, cooked
-4 cups kale, thinly sliced
-1.5 tsp minced garlic
-4 T apple cider vinegar
-2 T unsweetened almond milk
-2 T earth balance butter
-3/4 tsp salt
-paprika to taste (and for a little color pop)
Mash potatoes in a large bowl with butter, apple cider vinegar, and salt. Add the milk and continue to mash.
In a medium pan, heat 1 tsp coconut oil, and add the kale once the pan is hot. Stir frequently for about 4 minutes until the kale is almost wilted. Add in the garlic and mix well for about 30 seconds.
Add kale to the potato mixture and mash to combine. Add salt and pepper to taste.
Set oven to low broil with the oven rack at the top position.
Place 2-3 T sized scoop of potato mixture into a cupcake pan mold, forming a ball. Sprinkle with sea salt and paprika.
Broil for 10-15 min or until golden brown.
SERVINGS: approx. 24 potato bites
